Meal ideas inspired by Spring Time

As the weather gets warmer, and people naturally get happier, it becomes much more enjoyable to cook. Let’s explore some spring-inspired meals to make for friends and family. 

Fresh Lemon Salad:
This salad is a twist on a trending TikTok salad Crunchy Lemon Parmesan Salad
Ingredients:
-Romaine, Spinach, Kale (you can choose just one base or combine the three)
-Lemon juice (juice from 2-3 lemons)
-Salt and pepper to taste
-Minced Garlic (I put garlic in anything, this is optional)
-One diced Cucumber
-Parmesan cheese
-⅓ cup olive oil
Combine all the ingredients into a large bowl and enjoy the refreshing crunch of this salad!
Great to serve with protein or as an appetizer.

Pesto Chicken Pasta Salad:
You can make this as a warm pasta dish or keep cold as a pasta salad.
Ingredients:
-Chicken breasts (I use one for myself if I’m cooking for multiple people, I like to use 3)
-Pesto basil sauce (You can make your own or buy a jar at the store)
-1-2 cups Spinach
-Penne Pasta
-Lemon Juice
-¼ cup Olive Oil
-Cherry tomatoes (as much or as little as you would like)
-⅓ cup Parmesan cheese

Cook chicken breasts. You can shred or dice the chicken. Cook the pasta and combine pesto sauce, lemon juice, salt and pepper, olive oil, spinach, and tomatoes in a large bowl. You can serve this warm or cold, either way, everyone will love it!

Spicy Mini Tacos:
This is one of my all-time favorite recipes. Whether making them as a meal or finger food for guests, these are perfect.
Ingredients:
-Ground beef or turkey
-Diced yellow onion
-2 tablespoons hot sauce 
-2 cloves minced garlic 
-1 tablespoon Worcester sauce
-Chipotle sauce/salsa
-Diced pepper (optional)
-Salt, Pepper, Paprika, Chili Powder, Cumin, Oregano, Cayenne 
-Mexican blend cheese, Lettuce, Sour cream
-Mini tortillas 

Sauté diced onions, garlic, and peppers in vegetable oil until onions are translucent over medium heat. Add ground meat and cook for 5-6 minutes (or until almost cooked). Add hot sauce, Worcester sauce, salsa, and seasonings. Cook for another 5-6 minutes. Warm up the tortillas and add the meat and toppings.

These tacos are both sweet and spicy, I could eat them every day!
